Broccoli Almond and Grape Salad























We don't eat enough broccoli in my household. Partially because I hate washing it. I literally wash broccoli (lettuce and cauliflower too) at least 5 times. 2 times with vinegar water and 3 times in between with water. Just remember not to soak your fruits and veggies for too long because any water soluble vitamin will go away with your water.


Anyway- so because we don't eat enough broccoli, I am always trying to find creative ways to prepare it. Give the grapes a chance. It sounds odd, but the flavors are GREAT together and the refreshing bursts of grapes go well with the bland taste of broccoli. I could have eaten the whole salad by myself. This is in my top 3 of salads! Hope you enjoy it.

Broccoli is considered one of my super foods. Eating it raw is the best way to eat it because it has a lot of water soluble stuff! broccoli has been linked to "preventing and controlling the following medical concerns: Alzheimer's disease, diabetes,…".  


Serves 4-6
Takes about 30 min to make (if your chicken is already cooked or if you don't add chicken)

INGREDIENTS

Broccoli - 2 cups chopped
Carrot - 1 cup grated
Red Grapes - 20 grapes cut in half 
Blanched almonds - 1/2 cup either in slithered, sliced or chopped whatever you have on hand
Cooked Chicken - to shred about 1/2 cup (optional) Use leftovers or rotisserie chicken, or cook 1 breast as you wish to cool and shred into salad.
Mayo - 2 tablespoons
Apple Cider Vinegar - 1/2 cup
Salt and pepper 

INSTRUCTIONS


Cut and wash your broccoli.



Grate your carrots. 


I had some red carrots that are in season and regional, of course I jumped to the opportunity to add it to the salad and add the beautiful color.


Cut your grapes.



Add your almonds.



Mix your mayo with the salt and pepper and vinegar. The idea is not to make this super creamy but give it a hint of a dressing a bit more than just some vinegar.




You can add some shredded chicken. (optional)



Mix and serve!
